I’m begging one more day of this long weekend. I promised a yummy post but I didn’t get that one finished up quite yet. There have been too many toes to nibble, bug bites to soothe, birds to “Quack” at, tears to comfort, and lions to brush out of teeth (I don’t even know how to explain that last one).
So here’s a little peek of our fun from this long weekend…along with some photos of yesterday’s baking frenzy as a tease. I’ll have that yummy post for you on Thursday!

Now we are off to take a stab at some schoolwork…schoolwork which was sadly neglected during last week’s sunny days. At least cold and rainy days are good for some things.
Have you had anything baking in your kitchen lately?
I have been experimenting with adding pureed veggies to my baking. So far I have got the hang of 2 muffin recipes (with cauliflower and squash), banana bread with pumpkin, french toast with sweet potato and egg puffs that also have squash. Most have been a hit with my boy who refuses to eat a veggie….
I’m especially curious about that french toast…sounds yummy! We have some picky eaters here, too – they love to decide purely by the look of something that it’s disgusting.

Wow, I’m intrigued by all this baking with veggies! I love sneaking a little something in – but I haven’t tried baking with squash or beans.
